I shoot mostly at Capitol Raceway, but endup being invited to other tracks for private events, and I also do private photo sessions (for posters and such). Right now I do 99% cars, but I've got a deal with some local airports to start shooting planes as well (hell, we spend enough time at the airport anyway -- we have a Cessna).

I've gone as high as 20x30 posters -- although I've got a client bugging me to try 24x30. I may do it because I want to see what one looks like, but I'm not sure how it will turn out. The 20x30's are nice and crisp, but I don't want to push it.
I also sell lots of prints and CD's. Right now, 8x10's, CD's, and 16x20 posters each account for almost one clean third of my business.
